Hello there! I had a busy day out and feel like I have a ton to do before we leave for Houston tomorrow morning. I got a chance to catch up with my sister on the phone (we are long distance, so phone is the best we can do), and always feel so happy after I connect with her. Here is a pic of my 2 awesome sisters and my mom, taken before going out to dinner the night before my younger sister’s wedding in October 2009 (had so much fun that night!)

During Dessert (I believe we shared 2 desserts between the 4 of us), and perhaps some red wine!
Breakfast/Lunch
I had a tennis match from 1-3pm today, so I knew I had to eat a big enough breakfast/lunch to stave off any hunger. I wasn’t sure what to have, but I knew I should have some combination of carbohydrates and a bit of protein. I had what I call a breakfast/lunch. First I had oatmeal with almond butter, chocolate almond milk, and dates (the usual). And then I had a pesto chicken tortilla (a combination of cooked chicken, pesto, mozzarella and red onions).

This somewhat random combination of food worked out beautifully. I didn’t feel hungry during the entire match, nor was I bloated or lethargic (always a concern for an IBSer). I had half a grapefruit and a homemade biscotti on the way home from tennis. I always like to have a bit of food within 30-40 minutes after I exercise as I believe it helps your muscles refuel. It is especially good if you can get some protein and carbs in within that time period from exercising. I am not talking a lot of food, just a small bite of something.
IBS Note: I was a bit concerned that the mozzarella cheese in the tortillas would upset my stomach, but there was so little of it, and because I had preceeded it with oats (LOVE OATS), as well as the flour tortilla that wrapped the cheese, I had no problems whatsoever. See…we can even eat cheese (in small quanitties!)
Dinner
Though the breakfast/lunch kept me all day, by 530pm I was feeling hungry, so I made a Kim sandwich w/ a side of some leftover salmon (knew I needed some protein) and some Thai-Inspired Veggies. The open faced sandwich had:
- Hummus
- Avocado
- Crumbled falafel (from frozen, just thaw one at a time as I need)
- Feta cheese
- Sauteed spinach w/ garlic
- Tomato Paste

)
I was still feeling a bit peckish so I had some of my leftover Sweet Potato Black Bean Chili with macaroni pasta mixed in. After that, I was satisfied and finished my meal with a hot cup of peppermint tea.
Better get packin for my trip….more from Houston (hopefully some real Texas BBQ!)
